Fun and Yummy Low Calorie Halloween Popcorn Balls

I know that a lot of toddlers are picky eaters, but my Annabelle puts most to shame. She won't even eat the typical little kid food. Chicken nuggets? No. Pizza? Nope. Mac and cheese? No way. Peanut butter and jelly? Not a chance. Hot dogs? Yeah right!

Imagine my delight when I discovered that she likes popcorn. I fully recognize that there are many healthier foods that she should be eating, but the list of things that she will eat is so incredibly short that I rejoice at being able to add just about anything. Since making this discovery, I decided to make some popcorn balls. Considering my lack of self-control these days I thought that it might be a good idea to try to make a lower calorie version of this Halloween treat. At about 80 calories each, they turned out great!

Ingredients:
5 cups fat free air-popped popcorn
3 tablespoons honey
4 tablespoons reduced fat peanut butter
3 tablespoons mini semi-sweet chocolate chips

1. Mix together popped corn and chocolate chips in a large bowl.
2. Fill a smaller bowl with ice and water and set aside.
3. In a small saucepan over medium-high heat, stir together honey and peanut butter until bubbling.
4. Pour the honey peanut butter mixture over the popcorn and chocolate chips, and combine well with a spatula.
5. Dip hands in ice water and roll popcorn into 2-inch balls (dip hands in ice water in between each ball as well). Place them on a sheet of parchment paper to cool.
6. Enjoy.
Makes 10 popcorn balls

  1. Ooh, these look delicious! I used to be obsessed with sweet popcorn...now I don't eat it as much, but I still love festive baked goods around Halloween!
