The Duchess Wows in McQueen (again)

Seriously, could Kate Middleton get any more perfect? She looked flawless, as usual, at Prince George's Christening. I really want to hate her, but she seems so genuinely nice that I just can't do it. Dressed in Sarah Burton for Alexander McQueen, the Duchess' ivory dress matched her adorable son's traditional christening gown. I'm just dying to pinch those cheeks!

It's On B*tch!

Ms. Simpson better bring it because the race is on to slim down post baby. Having had the pleasure to share the birth month with Jessica, we are now both trying to shed weight, although I don't have a multi-million dollar contract with weight watchers as an incentive (boo hoo for me). Regardless, I have my own motivation of wanting to live a long and healthy life looking as good as I can in my mommy heels. My goal is to be a MILF! I admit it, I want to be a MILF and I'm not hiding it!

Fun and Yummy Low Calorie Halloween Popcorn Balls

I know that a lot of toddlers are picky eaters, but my Annabelle puts most to shame. She won't even eat the typical little kid food. Chicken nuggets? No. Pizza? Nope. Mac and cheese? No way. Peanut butter and jelly? Not a chance. Hot dogs? Yeah right!

Imagine my delight when I discovered that she likes popcorn. I fully recognize that there are many healthier foods that she should be eating, but the list of things that she will eat is so incredibly short that I rejoice at being able to add just about anything. Since making this discovery, I decided to make some popcorn balls. Considering my lack of self-control these days I thought that it might be a good idea to try to make a lower calorie version of this Halloween treat. At about 80 calories each, they turned out great!

Ingredients:
5 cups fat free air-popped popcorn
3 tablespoons honey
4 tablespoons reduced fat peanut butter
3 tablespoons mini semi-sweet chocolate chips

1. Mix together popped corn and chocolate chips in a large bowl.
2. Fill a smaller bowl with ice and water and set aside.
3. In a small saucepan over medium-high heat, stir together honey and peanut butter until bubbling.
4. Pour the honey peanut butter mixture over the popcorn and chocolate chips, and combine well with a spatula.
5. Dip hands in ice water and roll popcorn into 2-inch balls (dip hands in ice water in between each ball as well). Place them on a sheet of parchment paper to cool.
6. Enjoy.
Makes 10 popcorn balls

The Ever Elusive Wedding Weight


I am about 4 months postpartum at this point. I gained a whomping 45lbs with this little guy. My great love for ice cream should explain the weight gain (any and all kinds of ice cream or anything that resembles ice cream, I mean I really, really, like it). So with the help of child birth, cutting out the ice cream, and some light exercise I have managed to get back to my pre-pregnancy weight (mind you pre-preganancy weight of baby 3, which was way different than pre-pregnancy weight of baby 1). So this is where the real work begins...the ever elusive wedding weight. That's my goal; and why not? I am ready to put in the work even though I know my body and mind are going to be screaming.

So the what's the plan? The plan is two fold, change my eating habits and find a workout plan that I enjoy and will stick with. Basically, the food plan is low carb, high protein with lots of veggies and fruit at around 1500 calories per day. The problem is I'm a bit of a foodie, so I can't survive on just baked chicken breast for eternity. Last night I made scallops and turkey bacon with a side of asparagaus. Who doesn't love bacon! Everyone approved, even the little ones.



As for the workout portion of the plan, I have joined a Crossift gym, or box as they call it, and am mixing that up with running. So far, I am drinking the Crossfit kool-aide, it's fun, ever changing and challenging.

Oh, and by the way, he was worth every pound :)

Low Fat Pumpkin Muffins

Only ten weeks left! It’s starting to feel like I’ve been pregnant forever so I’m happy to be in the home stretch. Unfortunately, I’ve reached another milestone in this pregnancy and have officially gained the full amount of recommended weight (and I’m not talking about the lower end of the range). With ten weeks left to go, I am a little disappointed in myself. I have vowed to reel it in and chill out with the evil chocolate that's always tempting me at the office. Don’t get me wrong, I fully intend to indulge here and there, but would like to try to exercise a little self-control.

The arrival of fall has been joined by a new craving for anything and everything pumpkin flavored. While the Starbucks pumpkin bread is totally worth all 390 calories, here is a 120 calorie treat that is tasty and satisfies my craving.

Ingredients:
2 cups flour
1 Tbsp baking powder
1 tsp table salt
1 tsp baking soda
1/2 tsp ground cloves
1 tsp ground cinnamon
1 tsp ground nutmeg
2/3 cup natural applesauce
1 cup canned pumpkin
2/3 cup sugar
1/4 cup egg substitute
1 egg
2/3 cup fat-free milk
Non-stick cooking spray
powdered sugar

1. Preheat oven to 400 degrees. Coat muffin tin with cooking spray (recipe makes about 15 muffins).
2. Combine flour, baking powder, salt, baking soda, cloves, cinnamon, and nutmeg in a bowl.
3. In a separate bowl combine applesauce, pumpkin, sugar, egg substitute, egg, and milk; mix thoroughly.
4. Stir the flour mixture into the applesauce mix.
5. Pour the batter into muffin tins. Bake for 20 to 25 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
6. Let cool for about ten minutes. Sprinkle powdered sugar.
7. Enjoy!

My Crazy Husband the Spartan

So this is what I’m married to: someone who has worked out his entire life and somehow enjoys it, ugh! While I’m trying to keep my hand out of my daughter’s Oreo stash, he is training and competing in 26.2 mile obstacle course races (Spartan races) in the mountains of Vermont. Me, on the other hand, as a working mother of three, and my youngest, Pano, only three months old, I am starting to organize a workout schedule and menu planning... sounds like fun!
